I want to wish everyone a very merry Christmas with a little recipe gift from our family, well, it’s really one I learned from Matt’s family, because I think they’re all descendants of Betty Crocker, but this one is a perfect recipe for this #GoodEnoughMom. As you all may already know, I can’t and don’t voluntarily cook, so I’m always looking for easy meals, and this potato soup cannot get easier or yummier.
So, for all the #GoodEnoughMoms, this one is for you. Merry Christmas.
Ingredients you’ll need:
- 16 oz Vegetable Broth
- 8 oz Cream Cheese
- 1 package Knorr Leek recipe mix
- 1 package of frozen hash browns with onions and peppers
- Optional garnishes: shredded cheese, sour cream, bacon, green onions
Step One: Clean out the crock pot from last week’s chili
Step Two: Dump all ingredients into clean crock pot.
Step Three: Cook on high until all mushy and creamy.
Step four: Add garnishes and enjoy the best potato soup ever!

Ha!! Love your step 1 – YES. Here too. Every single time. I’ve made potato soup with the hash towns and they were such a life-saver!! I love the look of this recipe so much. I’m definitely going to try it next week.
